WIAW: Soup, subs, and candy

I've never linked up for What I Ate Wednesday (WIAW) before, but I figured I'd give it a shot this week and see what all the hype is about.

Other than finding it hard to remember to photograph my food before digging in, this is a pretty easy prompt to follow along with. WIAW is exactly that - a documentation of everything you ate one day (in my case, yesterday). Interestingly enough, I found that knowing I needed to take a picture of what I was eating was a good way to keep myself accountable for what I had. I reconsidered several (not all, let's be real) junk food options throughout the day, which was definitely good for me! I've always known that food tracking (via Weight Watchers, or on my own) is a good way for me to cut down on the less healthy options, and that's what this sort of felt like. Granted, it would be easy to not be honest about a day's worth of food... but I was! I am my own worst judge, and generally do pretty good about eating healthy when I'm writing it all down.

So here we go.

The same thing I eat every single morning: Greek yogurt + a banana, with coffee on the side. I'm a creature of habit (and simplicity).

One of my comfort foods! I made a big batch of cheesy chicken and potato chowder for our lunches this week, and it is SO GOOD. This is definitely going into the rotation for fall / winter meals. I don't even mind eating it several days in a row! Those crackers were crushed and dumped into my soup immediately after this picture was taken, exactly as it should be.

Meant to have this with my lunch, but wound up eating it on the train home, instead. String cheese, for the win. Another portable item - great for commuting!

When I got home from work, I quickly ate the rest of a bowl of mac and cheese from Toast, before heading off to yoga. Not exactly the best pre-workout food, but it wasn't going to last another day in the fridge, and it was so dang good! (no picture, moving too quickly!)

Dinner was restaurant-worthy. Seriously! Meatball subs, made with my favorite meatballs from Iowa Girl Eats, with a quick Caesar salad on the side. I made these meatballs several weeks ago and had them in the freezer. C warmed them up on the stove in some marinara, then constructed our sandwiches. Melty, toasty, delicious goodness. The meatballs have shredded zucchini in them, so we got an extra dose of veggies, too! Accompanied by an un-pictured glass of wine... let's consider that a serving of fruit. Right??

I am almost positive that I should have waited to buy Halloween candy until ummm.. tomorrow... but I didn't, and several pieces were consumed while watching The Voice last night. We rarely have candy in the house for exactly this reason - it is the one thing C & I can't resist! Hopefully, we have about a million trick-or-treaters so that I can give it all away tomorrow. Otherwise, we are in trouble!

Meatball subs sound so good- I'm making them tonight!

That soup sounds so yummy! I'm going to have to give that a try for the fall/winter. I love the idea of making a big thing of soup and freezing out portions of it for later.

I haven't had a meatball sub in the longest time. Truth be told, I actually forgot all about them. Yours look so gooey, cheesy, and just delicious!

I know that breakfast is important, but being portable and easy is just as important to me. It's easy to throw the yogurt & banana in my bag every morning before work, so that's what I get!

We almost never eat them - I use the meatballs with pasta or spaghetti squash most of the time - but for some reason, this week, I got that idea in my head and just had to have them. Hit the spot perfectly, too :)

Welcome to WIAW! Haha. It's one of my favorite week traditions, because I'm super nosy and love seeing what everyone else is eating (and I usually get a ton of ideas!). Your dinner looks delicious though! I've never made the IGE meatballs before, but they sound delicious! And I love that you can freeze them! Also, commuter food for the win.
